How do I keep a copy of all emails...

...to one specified address? I used to be able to, but forgot how. -.-

Where do you want to store the copy.
Do you want to store just incoming or outgoing too?
If at first you don't succeed, bomb disposal probably isn't for you! ヅ

Perhaps: Settings-> Advanced-> Mirror-> Set an email address to get copy of all emails all in/out

Otherwise there's the Forwarding tab on each user with 'Keep original message' option
