Using a hmail server as a backup mx

I understand the need for a MX backup or mailbag server and have used it in the past with ArgoSoft. I now have hmail and have incorporated as well. (DNS MX records are correct)
What I don't understand is
"when a sender matches route, treat sender domain as

and When Recipient matches route, treat recipient domain as


I am backing up for 2 mail servers.
1. Is my own primary (and has the same domain name as the secondary mail server (with 30 domains and 150 users)

2. A friends Mail server that does Not have the same domain name and has 50 domains and
and 300 users

Can someone break down the above scenerios for me. Obviously this secondary mail server
will only be sending mail to the primary mail servers and not used as a primary for anyone
