Under SMTP settings > Advanced > Bind to local IP address,
I would like to be able to bind to one IPv4 and one IPv6 address instead of just one or the other.

You can't.
If you leave it blank hMailServer will use the Windows default address when sending but it will listen on all available IP addresses - IPV4 or IPV6.

Thats exactly the reason its requested here in "Feature Requests" There was already a thread before and marting suggested it would be released in specific version but it is still not there (even the topic was more complex with binding to different ip's per domain/sender.
I really need both because right now google added just a new rule
Because my main ip on the server is not the one that is listening and used for mail.Remote server replied: 550-5.7.1 [xxxxxx-ipv6-address-xxxxx] Our system has detected that this message
550-5.7.1 does not meet IPv6 sending guidelines regarding PTR records and
550-5.7.1 authentication. Please review
