SMTP must be port 25 (unless you have a VERY specific reason not to)

So you were using the full domain name from inside the LAN and it wasn't resolving.

A fairly common error. Glad you got it working.

try using Netstat to determine what is possibly using port 25.

The error message says 'something MAY be using port 25'.

Perhaps this a windows firewall issue - the firewall has been beefed up in S2008 I believe. Try again with the firewall disabled.

Could be Antivirus, spam processor, or another mail server.
Are you sure you don't have IIS installed, as it installs the STMP service automatically.

Why?
Probably a local DNS issue.

Many small networks don't have a dedicate DNS. A workaround is to edit the C:\windows\System32\drivers\etc\hosts file to include the local (and internet) server name, matching them to a static IP address.

I manually purge mine a few times per day

Edit >> Purge deleted messages or
[ALT] + E, [ALT] + S, [ENTER]

Other e-mail clients make better use of this 'purging' than outlook, and most do it automatically.

Use hMailserver for your entire mail needs and bypass the need to use your ISP held accounts at all.
Allow your laptop users (ie directors) to connect back to your mailserver.

Would probably need to fix this bit, but not necessarily.

hMailserver sends a rejection message back to the SENDER of the rejected message, or it accepts the message, in which case it is not rejected.

Yes, i know this! Then perhaps you should have posted in the Development and Alpha Discussions area. There was simply a question who is guilty in this situation Hmail or SquirrelMail ? Is this a permissions issue? Is the windows user that the hmailserver service is running under have the necessary permissions to open IE?
