Perhaps you should try a valid HELO setting.

Its in the hostname setting for SMTP.

Some mailservers will reject the email if the HELO does not have a valid MX record.

Yes its not HM's fault about Apache, but it seems Apache got upset because it was trying to retrieve an email not there.

I was more concerned about hMailservers service halting than apache going beserk though.

I can reproduce this at will so will have logs for you soon.

It will respond with a '550 unknown user <invaliduser@gooddomain>' error.

It does not send a bounce email, just a failed to deliver error to the originator. This is the correct way (RFC) to deal with invalid users.
