Ditch Outlook and go with Mozilla Thunderbird ;)

That aside I think you are on the right path with IMAP. One of my users had that problem he was also using outlook. We switched him over to IMAP and that seemed to work. Then he upgraded to Thunderbird lol ;)

I have seen that error as well in the logs, Not sure what is causing it though. I have a feeling it is PHP's mail(); function but I will need to spend some more time debugging. If you find out what is causing it please let us know.
